If you have a vegetable spiralizer you made have already tried making your own butternut squash noodles. If you don’t have a spiralizer or are in a hurry, you can use a time-saving convenient item that won’t have a big negative impact on your diet – pre-packaged butternut squash noodles. You can find them in many of the larger grocery stores. They are absolutely perfect for those nights when you need to get dinner on the table quickly. Whether you’re using homemade or pre-packaged noodles, you’re going to love this fast and tasty Savory Butternut Squash Noodles dish!

This recipe as prepared serves 4-6 people. It requires approximately 5 minutes of prep time and 8 minutes of cooking time.

  • large glass mixing bowl

Ingredients

  • 2 tbsp extra virgin olive oil
  • 4 cups pre-packaged butternut squash “noodles”
  • 1.5 tbsp fresh sage, chopped
  • 2 tsp ground cinnamon
  • sea salt and freshly ground black pepper, to taste

Instructions

Heat the olive oil in a large skillet over medium heat.

Add the butternut squash noodles and cook for 4-5 minutes, turning frequently to ensure they cook evenly.

When noodles are slightly softened, remove them from pan and set aside, keeping them as warm as possible.

Add the butter to the pan and heat it until melted.

Stir in the chopped sage and cinnamon and cook until fragrant for approximately 2-3 minutes, stirring frequently.

Return the butternut squash noodles to the pan and toss to coat in the sage butter mixture.

Remove the noodles from heat and season them with salt and pepper to taste.

Serve immediately with your favorite entrée or as a light main course.
