I received an email last month from Taco Tammy, the owner of La Bonita Ole. She was asking me to help her “Save The Tortillas“. I told her I’d be willing to try the tortillas for myself, because I felt the writing about the campaign wouldn’t make sense to me without trying the product.
When I came home from vacation last week there was a box of tortillas on my porch.

Wow. RB likes wraps and I’ve been feeling like cooking lately so I knew they’d be put to good use. I decided to make my first batch of enchiladas.

Since it was my first time I decided to try it using already prepared ingredients.
- 1 pound ground beef
- 2 cans of Old El Paso Enchilada Sauce
- 1.5 cups shredded cheese (I used cheddar)
- Tortillas
Preheat the oven to 375 F.
Cook the ground beef, draining fat when fully cooked.
Stir in 3/4 cup of the enchilada sauce and 1 cup of the cheese.
Spoon the mixture into the tortillas, rolling the tortillas and placing them seam sides down.
I said seam sides down. It’s important.
Spoon the remaining enchilada sauce over the top and sprinkle the remaining cheese.
Bake for 15-20 minutes.
Sounds easy enough right?
I had no problem with the prep cooking and mixing.

I had no problem putting the mixture onto the tortillas. At least that’s what I thought.

See the problem? My tortillas wouldn’t stay shut. Why is that? Because I didn’t put the seam side down. No point in turning back now. I put them into the oven. I even tried to make them stick shut by putting a little extra cheese but that didn’t work. Oh well.
Here’s a picture of them getting happy in the oven.

I made two of them on small 6″ Tam-x-icos corn tortillas so CJ could have them. The rest I made on 8″ taco size Traditional Flour Wrap-itz. In the end we agreed that my first enchiladas were tasty but very messy. We really liked the flavor of the tortillas, they tasted as fresh as we’ve had at a restaurant. I’d totally buy these for my next foray into burritos and enchiladas. But before I make them I’ll be sure to take Tortilla Wrapping 101 one more time.
Which brings me to the Save The Tortillas campaign. Due to the economy many things are not what they should be – for you, for me and for many businesses. Taco Tammy is fighting hard against the bank to keep her business. I can understand her passion, she’s got a good product. All of the company’s products are trans fat-free, 96% fat-free, cholesterol-free, Kosher and made with canola oil for heart health. The company was named Tortilla Manufacturer of the Year and Wrap-itz 100% Whole Wheat with Omega-3, Calcium and 10 Whole Grains was selected as one of the the 100 Best Packaged Foods for Women by Women’s Health Magazine.
The tortillas are available in more than 30 varieities and may be purchased at most major retailers in the Eastern US.
The Save The Tortillas campaign is hoping to raise enough awareness to keep the business. If you’d like to help Save The Tortillas you can sign a petition on the website, as well as share the message on Twitter and Facebook. And of course, buying the tortillas wouldn’t hurt either.
