I am a big fan of quick and easy meals. We use a lot of rice in our house, partially because we like it and partially because it’s gluten-free. If I’m in a hurry I have relied on quick rice many times. It’s a staple in our pantry. Cook it and toss butter on it and it’s good to go. Sometimes though, buttered rice is just a bit boring. This week I found myself looking to create a quick dinner and I wanted it to have sort of a Chinese food vibe. It was the perfect opportunity for me to try Success® Jasmine Rice.
You are probably familiar with Success® Rice. It’s the original boil-in-bag rice. There’s nothing to measure and nothing to do to make it other then put it in a pot of water and boil. It’s done in ten minutes. Success® Jasmine Rice is the only boil-in-bag Jasmine rice available. Other then it being Jasmine rice, which has a different flavor and texture then white rice, it’s the same easy to make product as the original.
We’re fans or Chinese food in our house. But getting takeout can be expensive. I decided to try my hand at making an at-home version of Sweet And Sour Chicken. By cooking it at home I saved money and knew for sure it was gluten-free. And it was done even faster then the time it would have taken to order Chinese food and wait for it to be delivered. The resulting dish was very tasty and will be appearing on my table again. Here’s how I made it.
Quick And Easy Gluten-Free Sweet And Sour Chicken
- 2 packets Success® Jasmine Rice
- 1x 9 oz package Perdue Short Cuts Carved Chicken Breast Original Roasted
- 1.5 cups Honey Barbecue Sauce (I used Sweet Baby Ray’s)
- 2 small green peppers
- 1x 8 oz can pineapple chunks in pineapple juice (undrained)
- 2 tsp brown sugar
Cook the Success® Jasmine Rice according to instructions. Basically, put the bags into water. It is that easy!
After you start the rice, cut the chicken into chunks and the peppers into similarly sized pieces.
Place the chicken and the peppers into a pan. Pour half of the pineapple juice from the can into the pan over the chicken.
Heat the content of the pan for about 2 minutes, stirring occasionally.
While that is heating, place the barbecue sauce into a small bowl. Add in the brown sugar and stir well.
Add the barbecue sauce mixture and the rest of the pineapple juice.
Heat for about 8-10 minutes on medium, stirring frequently.
The rice should be done now. Take it out of the water, open the bag and pour it onto a plate or into a bowl. No muss, no fuss. It’s ok if a little accidentally makes it’s way into your belly during the transfer. It’s super tender and moist. Don’t worry, I won’t tell.
Remove the pan of chicken from heat and serve over the rice.
