  • 3 cups of popped popcorn
  • 3 tbsp butter
  • 1/4 cup sugar
  • 2 tbsp water
  • ¼ cup dark corn syrup
  • 1/4 tsp vanilla extract
  • 1/4 tsp salt
  • 1 tsp pumpkin pie spice

Coffee Popcorn Ingredients

  • 3 cups popped popcorn
  • 3 tbsp butter
  • 3 tbsp very strong coffee
  • 1/4 cup sugar
  • ¼ cup dark corn syrup
  • 1 tsp finely ground coffee

Other Ingredients

  • 1 cup of Pumpkin Pie flavored M&M’s
  • 1 cup of pumpkin baking chips

Instructions

Line a baking tray with parchment paper.

Start making the Pumpkin Pie Popcorn by placing 3 cups of popped popcorn into a large bowl.

In a saucepan over medium heat, melt together the sugar, corn syrup, water, vanilla extract, salt and pumpkin pie spice together with the butter.

Cook and stir over low heat until the sugar is dissolved.

Slowly pour the butter mixture over the popcorn, then toss and gently mix with a spoon until the popcorn is fully coated.

Take the popcorn and pour it onto a parchment covered baking tray.

Bake the tray of popcorn in the oven, uncovered, at 300°F for 10-15 minutes.

Open the oven every four minutes and remove the popcorn to stir the mixture before returning it to the oven.

Repeat the above steps for the coffee popcorn.

Let the popcorn sit for at least 30 minutes in order to completely cool.

Combine all of the popcorn in a large bowl.

Add the M&Ms and pumpkin baking chips to the bowl and toss to combine.

Serve and enjoy!
