
One-pot Gluten-free Sausage And Rice
I love one-pot meals. They’re so easy to make, and save on the amount of dishes you have to wash. Rice is one of my son’s favorites, and because I usually only buy brands that are gluten-free, is safe for him. The resulting dish even pleased hubby. He thought it would be on the acidic side, but it wasn’t at all – it was almost sweet. Here’s how I made it.
INGREDIENTS
- 1.25 – 1.5 lbs sweet Italian sausage
- 1x 28 oz can diced tomatoes
- 2 cups Minute Rice
- 4 cups water
INSTRUCTIONS
Cut the sausage into slices.
Place sausage into large skillet and cover with 4 cups of water.
Cover and cook until sausages are browned and cooked.
When sausages are done add the tomatoes and stir well.
Add the Minute Rice and stir well, making sure all rice is wet and covered.
Cover and let sit for 5 minutes.
Serve with salt and pepper to taste.

Casseroles are great, easy to make and convenient. Wish I could find recipes to crock for two. Hubby dislikes LO's.
