Ingredients

  • 1.5 lbs boneless chicken breast
  • 1x 28oz can diced tomato seasoned with basil, garlic and oregano (I used Redpack)
  • 1 cups shredded mozzarella cheese
  • 8-12 oz fresh mozzarella
  • 1 lb pasta (I used Ronzoni large shells)
  • 4 cups chicken broth (you can use water if you prefer)
  • 2x 0.7 oz packages Italian dressing mix (I used Good Seasons)

Instructions

Set the Ninja to dry bake at 375 for 40 minutes. The first 5 minutes of this will allow the Ninja to heat up while you do the prep work.

Cut the chicken into bite sized pieces and place into the Ninja pot.

Pour the dry pasta over the chicken.

Sprinkle the cup of shredded mozzarella over the pasta.

Add the water to the pot, then the contents of the dressing mix packets, then the diced tomatoes.

Use a silicone spoon to gently stir it all to combine. Be sure to cover the pasta.

There should be about 35 minutes remaining on the timer.

Put the lid onto the Ninja and allow the dish to bake.

Shortly before the cooking time is completed, slice the fresh mozzarella into slices.

Once the timer has finished the cooking cycle, take the lid off, stir the contents and check the pasta. It will be al dente. Should you desire the pasta to be a little softer, put the lid back on and add another 5 minutes to the cooking time.

Remove the lid from the Ninja.

Place the slices of fresh mozzarella across the top of the food. Put the lid on and allow to sit for about 5 minutes, which will be enough time for the cheese to melt.

Serve immediately with your favorite rolls or garlic bread.
