We go through a good number of corn tortillas here, because they’re the only type of gluten-free tortilla I can easily find around here. MexiAmerica is one of the most popular tortilla brands in the Northeastern United States. They asked me if I’d try some of their products. I received some of the flour tortillas and the corn tortillas. It was great to learn that MexAmerica tortillas contain no transfats, and they are also high in fiber and protein. Their corn tortillas are the ones I was most interested in, as they are gluten-free. They’re made from white and yellow corn, and are the traditional 6″ size you’re likely familiar with if you eat corn tortillas. We tried making some sandwiches with them and my son was very happy. The corn tortillas were very soft. They heated well and made for a very tasty turkey and cheese sandwich, my son gobbled it up in a hurry and asked for more.
A few days ago I was trying to figure out something different to make for breakfast. We go through a lot of pork roll here, but it’s almost always on a bagel. My youngest has Celiac disease so he eats gluten-free bagels, which are really heavy, making the sandwich just too much for him to eat. I wanted to come up with something quick and easy that did use pork roll that was gluten-free and yet tasty enough that everyone would want to eat it. If you’ve ever eaten some gluten-free food, you know why I say that. The MexAmerica Corn Tortillas I received for review turned out to be perfect for what I wanted to do. This is what the result was. It’s tasty and very easy to make, and only took five minutes.
- 1x 6 inch corn tortilla
- 1 large egg
- Pork roll (I used two thin slices and a few thinly sliced ends)
- 1-2 oz shredded cheese (I used cheddar jack, you could use any cheese you like)
Cook the pork roll. You can fry it or microwave it, whatever works for you.
Cook one egg.
While the egg is cooking, warm the tortilla.
Place the pork roll on top of the tortilla.
Place the egg on top of the pork roll.
Sprinkle the shredded cheddar cheese on the egg.
Microwave for about 10 seconds to partially melt the cheese.
