The milder weather of spring has arrived. Before you know it summer will be here, bringing with it hot afternoons that beg for the coolness of water. I don’t know about you but when I think of water, one of the first things that I think of are mermaids. These fun cupcakes have beautiful colors and a lovely under the sea theme. They’re appropriate for any gathering, and they’re especially perfect for anything water related. Pool party anyone? Here’s instructions on how to make them.
Mermaid Cupcakes
This recipe makes 24 cupcakes.
Equipment needed
- 3 mixing bowls
- cupcake pan
- cupcake liners
- whisk
- electric hand mixer
- medium ice cream scoop
- wire rack
- 3 small bowls
- 1 piping bag with a large star tip

Ingredients
Cupcake Ingredients
- 1 ¾ cup flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 2/3 cup sugar
- 2 eggs, room temp
- 2 tsp vanilla bean paste
- 1/2 cup vegetable oil
- 1/3 cup whole milk, room temp
- 1 1/2 tsp vanilla
Vanilla Frosting Ingredients
- 1 cup unsalted butter (softened)
- 4 cup powdered sugar
- 4 tbsp heavy whipping cream
- 2 tsp vanilla bean paste
- teal, sky blue gel coloring
Candy and decorations
- 1 package of mini plastic forks
- 1 package of edible pearls
- 1 package of edible purple pearls
- 1 package of edible pink pearls
- 1 ocean life fondant molder (Michaels)
- 1 container of white fondant
- 1 container of pink fondant
- 1 container of teal fondant
- 1 can of gold cake spray
- 1 bag of green edible grass

Instructions
MOLD FONDANT PIECES BEFORE YOU BAKE CUPCAKES
Cupcake Instructions
Preheat the oven to 350 degrees f.
Line the cupcake pan with paper liners.
Place the flour, baking powder, baking soda, and salt into a mixing bowl and whisk well to combine.
Set the flour mixture aside.
Place the sugar and eggs into a second bowl.
Use an electric mixer and beat until well combined.
Add the oil, whole milk, and vanilla bean paste to a third bowl and stir until mixed thoroughly.
Add the third bowl of ingredients to the second bowl of ingredients (the sugar and eggs) and mix well to combine the two.
Slowly add the wet ingredients to the dry ingredients, stirring just enough to blend all of the ingredients together.
Use a medium ice cream scoop to fill each cupcake tin 2/3 of the way full.
Bake at 350 degrees for 18 minutes.
Remove the cupcakes from the oven and allow to cool in the pan for about 5 minutes.
Transfer the cupcakes to a wire rack and let them cool completely.
Cupcake Frosting Instructions
Cream the powdered sugar, vanilla, and butter until the mixture is light and creamy. If for some reason it doesn’t cream you can add a few drops of heavy whipping cream until it creams.
Test to see if the frosting can form and hold a stiff peak by getting a spoonful of frosting and turning the spoon upside down. If the frosting stays on the you’re ready to proceed. If it doesn’t, add more powdered sugar 1/4 cup at a time, mixing well.
Once the frosting is ready, divide it into 3 bowls.
Add the teal color to the first bowl.
Add the sky blue color to the second bowl.
Leave the third bowl white.
Use a spoon to place some teal frosting into 1/3 side of the frosting bag,
Add the sky blue frosting to another 1/3 side.
Add the white to the last 1/3 side.
Twist the open end of the pastry bag and squeeze the frosting to the tip.
Start at the outer edge of each cupcake, frosting moving in a circle inward to the center of the cupcake.
Cupcake Decorating Instructions
Place the white shells onto a piece of paper and spray with the gold spray.
Use a pair of scissors to cut about 3-4 inches of the grass.
Place the grass into the center of the frosting.
Place the fork on the right side of the grass.
Place some shells randomly on the cupcakes.
Finish the decorations by adding some pearls.
Serve and enjoy!
