Mac And Cheese is one of our family’s favorite comfort foods so I make it fairly often. While a nice serving of yummy, cheesy goodness is nice, sometimes I want to change it up a bit. Sometimes I add a meat or vegetable, occasionally both of those. Sometimes I like to combine something tomato with it. I first discovered I liked the taste of red sauce mixed with mac and cheese many years ago. I’d made mac and cheese and didn’t have quite enough milk to properly make the box of pasta so I added a little jarred sauce that I had in the fridge. I like the way the tomato offsets the cheese, giving a sort of tangy-ish flavor. Recently I shared my recipe for a 5 Meat Pasta Sauce. I made a batch of Mac and Cheese with that and wound up with Meaty Tomato Mac And Cheese. The meat gives extra flavor to an already tasty dish and singlehandedly turns a side into a meal. Here’s how I make it.
Meaty Tomato Mac And Cheese
Equipment Needed
- electric pressure cooker (I used a 6qt instant Pot) OR pasta pot
- silicone cooking spoon
- measuring cups
- 9×13 baking dish

Bialetti Oval 5 Quart Pasta Pot with Strainer Lid
Pyrex 9×13 3Quart Glass Baking Dish with Lid
Ingredients
- 1 lb pasta
- 4 cups of water
- 4 tbsp butter
- 1 cup sour cream
- 16 oz shredded sharp cheddar cheese
- 1.5 cups of my Meat Lovers Pasta Sauce (recipe here)

Instructions
If making the mac and cheese from a box follow the instructions. Place the pasta and water into the pressure cooker and seal.
If making the mac and cheese from scratch using an Instant Pot, start here.
Place the pasta and water into the pressure cooker and seal.
Set pressure cooker to cook on manual 5 minutes.
Preheat oven to 350 f.
Spray baking dish with nonstick cooking spray.
Once pressure cooker is finished cooking, allow to release pressure naturally for 5 minutes before doing a quick pressure release.
Add in the butter, sour cream, and shredded cheddar and stir well until cheese has melted.
If you mae the mac and cheese from a box, resume following the directions here.
Add 1.5 cups meat sauce to the mac and cheese and stir well.
Pour mac and cheese mixture into the baking dish.
Bake for 15 minutes.
Serve immediately.

Wow. I like this mac and cheese recipe! It sure looks tasty and filling with all that meat and cheese. I will have to try this too. I still need practice using my Instant Pot!

I am curious about the sour cream ingredient. I might do this over the weekend and thinking of including parmesan cheese as my toppings.
