How do you start your day? Do you have a cup of coffee? Maybe a glass of orange juice? Breakfast? Like me, you’ve probably heard for a gazillion years that breakfast is the most important meal of the day.

The USDA states 44% of Americans eat breakfast every day. This means over half of the American population skips the most important meal of the day! According to a recent study conducted by Harvard School of Public Health, “Skipping breakfast may lead to one or more risk factors, including obesity, high blood pressure, high cholesterol, and diabetes, which may in turn lead to a heart attack over time.”

I can’t speak to that with any official authority, but I do know this. When I start my day with breakfast I don’t get hungry as quickly, I seem to eat less at lunch and dinner, and I just feel a little better in general. And, in truth, I love breakfast food. There are so many yummy things!

I’m always on the lookout for new recipes. Could you use some new recipes for breakfast or brunch? How about incorporating a healthy food/ingredient you might not have associated with a morning meal? I’m talking about avocados! Didn’t see that one coming, did you? I admit, I am not a huge avocado fan. I’d never think of them in terms of breakfast. I generally think of them only in terms of guacamole, which is followed by my scrunchy ewww face. I know next to nothing about avocados. In my quest to become more open minded about different foods, I decided it would be good to learn more about avocados.

Being avocado ignorant, I wanted to know important things. Things like:

  • Can avocados be frozen?
  • Can you bake with avocado?
  • What is the proper way to cut and clean an avocado?
  • What is the proper way to store an avocado to avoid the brown spots?

I left my questions in the hands of an expert, Chef Pati Jinich. Chef Pati Jinich is a cooking teacher, food writer and chef of the Mexican Cultural Institute in Washington, DC. She hosts the hit national Public Television series PATI’S MEXICAN TABLE and authored the best-selling cookbook by the samename, published by Houghton Mifflin Harcourt in March 2013. Pati is a regular guest on ABC’s “The Chew,” NBC’s “Today Show,” CBS’ “The Talk,” NPR’s All Things Considered” and “The Splendid Table,” and has been featured in The Washington Post, The New York Times, The Chicago Tribune and other leading media. She was born and raised in Mexico City and comes from a family of accomplished cooks. A graduate of Georgetown University, with a master’s degree in Latin American Studies, Pati has resided in the Washington area for 13 years, where she and her husband are raising their three sons. She blogs at www.patismexicantable.com and tweets at @PatiJinich.

Here’s a brief video featuring my questions, and Chef Pati’s answers.

It turns out that fresh avocados can be incorporated into many morning meals, including things like eggs, pancakes, parfaits and smoothies. I’ve learned that they’re an extremely versatile fruit that can add a creamy, rich texture and nearly 20 good-for you nutrients to your breakfast. We love avocados at our house, and just about any way you want to prepare them. Guacamole is my favourite, but I also love them on salad! My husband eats them for breakfast, plain. 🙂

I sampled avocados only a few years ago for the first time. Paired with the right foods, they are a great side veggie.
