The holiday season is officially underway! For folks with digestive issues, things get a bit more complicated right around Thanksgiving. Every invitation or get together during the holiday season means having to decide whether they can eat a dish or not. Faced with a dish they hate to skip, the choices have traditionally been to risk eating it and suffer or to skip it and miss it. Not much of a choice if you ask me.

My Mom is one of the many people that are faced with this choice. She has been dealing with some digestive issues for years now. Certain foods, many of which involve dairy, trigger some really unpleasant stomach problems for her. The Thanksgiving mashed potatoes? They had milk in them. Even something as simple as pudding  (which we all love) can cause problems. I’d heard of the LACTAID® brand before but had no experience with it. When I was recently asked to try using it I agreed, figuring I had nothing to lose and only happier guests to potentially gain.

I decided to make a pudding trifle. I found LACTAID® Whole Milk at Walmart, right there in the dairy department with the regular milk. The recipe is about the simplest thing to make, there are only three ingredients. Where I would traditionally use milk, instead I used the LACTAID®.

Having never used LACTAID® before, I was rather surprised to find that it looked like regular whole milk. And, it mixed and behaved like regular whole milk. Why is that? Well, it’s because LACTAID® Dairy Products are real dairy products that contain a natural enzyme added called lactase. Lactase helps break down lactose – the sugar found in dairy foods – into two simple sugars (galactose and glucose) that are easily digested. If not properly digested, lactose can cause gas, bloating, cramps, and/or diarrhea. LACTAID® Products can help people who have a sensitivity to lactose digest dairy products without stomach discomfort so they can enjoy the creamy, delicious taste of dairy that they love.

With all that info out of the way I was left wondering one thing. How would it taste? Well, I was astounded to find that the taste was really similar to that of regular whole milk, but maybe just a teeny bit sweeter. I served the pudding and didn’t tell hubby or my son that it was made with LACTAID® and they didn’t even know. Here’s how I made it.

Lactose-Free Pudding Trifle

INGREDIENTS

  • 1x 2.02 oz box instant chocolate pudding
  • 1x 1.85 oz box instant vanilla pudding
  • 3 cups LACTAID® Whole Milk

EQUIPMENT

  • 2 mixing bowls
  • whisk
  • bowls or glass mugs for serving

INSTRUCTIONS

Place the chocolate pudding mix into one bowl.

Place the vanilla pudding mix into the other bowl.

Pour 1.5 cups of LACTAID® into each bowl.

Whisk the contents of each bowl until the pudding is smooth.

Pour some chocolate into your bowl or mug. It will start to set very quickly.

Pour some of the vanilla pudding on top of the chocolate. It will also start to set quickly.

Repeat these steps until you have as many layers as you like.

Refrigerate the bowls or mugs for at least 20-30 minutes before serving.

The older I get, the less friendly dairy and I are. It's great you can still enjoy yummy recipes like this one without an upset belly.

I'm lactose sensitive and have used this product for years. One of my kids has the same issues so we buy more of it now. It tastes great and I bet the pudding does too.

This dessert is right up my alley since lactose bother my stomach sometimes. I've been scared to try Lactaid thinking it soild tatse weird but I think I'll give it a try.
