We eat a fair amount of rice around here. The reason for that is because it’s affordable, versatile, and in many cases gluten-free. This Cheesy Rice recipe pairs well with almost any meat or poultry dish. It’s one of the easiest Instant Pot recipes that I make, requiring only 4 ingredients and water. I make the recipe as instructed below so there’s plenty to go around and some for leftovers the next day. Here’s how I make Gluten-free Instant Pot Cheesy Rice.

Equipment Needed

  • electric pressure cooker (a 6 qt instant Pot was used to make this recipe)
  • measuring cups
  • silicone cooking spoon

Gluten-free Instant Pot Cheesy Rice Recipe From Val's Kitchen

Ingredients

  • 2 cups Arborio rice
  • 2 cups milk
  • 1 cup water
  • 4 tbsp butter
  • 6 oz Velveeta

Instructions

Place all of the ingredients into the Instant Pot.

Press the rice button, which will show that it will cook for 12 minutes.

Do a quick pressure relese.

Serve and enjoy!

    Rice is so cheap and easy to make. Plus it will feed a ton of people. Making cheesy rice is one of our favorite dishes. Simple and easy to make.

    I love making rice as both a side dish or even as a main dish. Not only is it inexpensive but it also fills you up. My kids love cheesy rice and we love trying different kinds of cheeses within it too. Thanks for sharing!

    This cheesy rice does sound and look great. Then again, anything with cheese seems to make it better. It’s not unlike bacon.

    I love different ways of cooking rice. Cheesy rice is one of our favorites. We also love fried rice with peas, carrots and thinly sliced pork tenderloin. Oh, and the seafood paella is a major favorite in our house too.

    That is a good way to use the instant pot. I haven’t ever used milk to make rice, I bet it makes it so much creamier than just the water. This look delicious.
