One of my favorite soups has always been chicken rice soup. I remember it being a favorite way to warm up on a cold day as a child. I aso always considered it to be an awesome comfort food. For me, chicken rice soup has almost always the power to help me just feel a little better when I wasnt feeling well. It’s gentle enough that it won’t bother an upset stomach. It can soothe a sore throat as well as clear a clogged nose or sinus. It’s just feel good food. You can buy heat and eat chicken rice soup in the grocery store if you’re in a pinch. But that doesn’t taste or smell nearly as good as homemade, and it costs a lot more. Chicken rice soup a really simple soup to make. It’s even simpler to make if you use an Instant Pot electric pressure cooker. This recipe for Instant Pot Chicken Rice Soup gives you an entire pot of soup in under thirty minutes. Here’s how I make it.

  • electric pressure cooker (I used a 6 qt Instant Pot)
  • cutting board
  • knife

Ingredients

  • 8 cups chicken stock (You can use 10 cups if you want a “brothier” soup.)
  • 1 lb boneless chicken
  • 1.5 cups white rice
  • 16 oz frozen mixed vegetables
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 2 tsp dried parsley flakes

Instructions

Pour the chicken stock into the pot.

Cut the chicken into small pieces a little larger than the frozen vegetables and then place the chicken into the pot.

Place the rice into the pot, followed by the seasoning and then finally the mixed vegetables.

Place the lid onto the Instant Pot and close it to seal it.

Set the Instant Pot to cook on manual high pressure for 4 minutes.

Once the cooking cycle has finished, do a quick pressure release.

Serve immediately with salt and pepper to taste.

That soup is so hearty! Perfect for chilly nights! It would also make you feel better when you’re feeling under the weather. Good to know there is an Instant Pot version. I remember my grandmother cooking something similar, but she had to stand by the stove for a long time, mixing the pot to make sure the rice does not stick.
