For me, chicken rice soup has almost always the power to help me just feel a little better when I wasnt feeling well. It’s gentle enough that it won’t bother an upset stomach. Instant Pot Chicken Rice Soup

Instant Pot DUO60 6 Qt 7-in-1 Programmable Pressure Cooker

Ingredients
- 8 cups chicken stock (You can use 10 cups if you want a “brothier” soup.)
- 1 lb boneless chicken
- 1.5 cups white rice
- 16 oz frozen mixed vegetables
- 2 tsp onion powder
- 2 tsp garlic powder
- 2 tsp dried parsley flakes

Instructions
Pour the chicken stock into the pot.
Cut the chicken into small pieces a little larger than the frozen vegetables and then place the chicken into the pot.
Place the rice into the pot, followed by the seasoning and then finally the mixed vegetables.
Place the lid onto the Instant Pot and close it to seal it.
Set the Instant Pot to cook on manual high pressure for 4 minutes.
Once the cooking cycle has finished, do a quick pressure release.
Serve immediately with salt and pepper to taste.
