Hubby and my oldest were in the mood for brownies yesterday. I’m always in the mood for a brownie but yesterday I was in the mood to make blondies, which I always think of as a brownie without the chocolate. I decided to make two batches of blondies – one for everyone, and a special one just for the hubby and my son. Hubby and my oldest love Reese’s Peanut Butter cups. I had a snack size package of them stashed away and thought it would be fun to put them into the blondies. I also wanted to add a bit more flavor to their batch, so I added some peanut butter to the batter as well. They were both totally thrilled and started gobbling them right up. Here’s how I made them.
- 1 1/2 cups light brown sugar
- 1/2 cup butter
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1x 2.5 oz bag Reese’s Mini Peanut Butter Cups
- 2 tsp creamy peanut butter
Preheat the oven to 350 f.
Place the light brown sugar, baking powder, salt, butter, eggs, vanilla, and peanut butter into a bowl and mix well. Add in the flour and mix well.
Pour mixture into a 13×9 baking pan.
Gently set the Reese’s Mini Peanut Butter Cups into the batter. Don’t press all the way down so they hit the bottom, but do press down enough that the bottom of the cup is in the batter.
Bake for 20 minutes, at which point a toothpick inserted into the middle should come out clean.
Cool for at least 5-10 minutes before serving (if you don’t want to burn your mouth). They’re also a little easier to cut that way.
