- stand mixer OR hand mixer and large glass mixing bowl
- mixing bowl
- whisk
- large cookie scoop
- cooling rack
Ingredients
- 1 cup unsalted butter, cold sliced
- 1 cup sugar
- 3/4 cup packed light brown sugar
- 2 large eggs, room temp
- 1 tsp pure vanilla extract
- 1 ½ cup flour
- 1 ½ cup cake flour
- 1 tsp ground cinnamon
- 1 tsp nutmeg
- 1 tsp allspice
- 1 tsp ginger
- ¾ tsp kosher salt
- 1 tsp baking soda
- 1 tsp cornstarch
- ½ tsp baking soda
- 1 cup chocolate sprinkles

Instructions
Preheat the oven to 410°F.
Line a baking sheet with parchment paper or a silicone baking mat and set aside.
Place the butter and sugars into a stand mixer’s bowl (or large glass mixing bowl if using a hand mixer) and cream together on medium speed for 2-3 minutes.
Add the eggs and vanilla and mix until combined.
Scrape down the sides of the bowl as needed.
Add theflour, cake flour , ginger spice, nutmeg, allspice, cinnamon, baking soda, cornstarch, and salt to a largebowl and whisk to combine.
Add the dry ingredients to the butter mixture.
Mix to combine.
Use a large cookie scoop and scoop out 4.0 oz dough.
Using your hands, roll the dough into a ball.

Place the chocolate sprinkles in a small bowl.
Take the dough ball and lightly press it down in the chocolate sprinkles.
Place the dough on a parchment or silicone lined baking sheet, 2 inches apart.

Bake for 14-15 minutes or until the dough ball is just barely set and no longer shiny.
Remove from the oven and set aside in order to let the cool.
Drizzle the caramel on top and sprinkle sea salt on top before serving.
