My favorite thing about a ham and cheese sandwich is the ham and cheese. And the tomatoes. I love tomatoes. I really enjoy stuffed tomatoes. One of my favorite combinations to stuff tomatoes with is ham and cheese. These stuffed tomatoes are pretty easy to make and make for a really nice lunch. Here’s how I make them.

- 2 large tomatoes
- 1 cup thickly sliced deli ham
- 1 cup shredded sharp cheddar (reserve 2 tsps for garnishing purposes)
- 2 oz cream cheese
- 1 tsp Italian seasoning
Preheat the oven to 400 f.
Slice the top off of the tomatoes. Gently scoop out the inside, removing the seeds while taking care not to break through the sides or bottom of the tomato.
Warm the cream cheese. (I microwaved for 30 seconds on medium power, long enough to soften it but not cook it.)
Dice the ham and place it into a mixing bowl.
Add in the cream cheese and stir.
Add in the shredded cheese and the Italian seasoning and stir well.
Stuff the ham and cheese mixture into the tomatoes and place the tomatoes onto a foil-covered baking sheet.
Sprinkle a tiny bit of cheese on top.
Bake for 15 minutes.
