
My youngest, who is to follow a gluten-free diet, loves pizza. Gluten-free pizza can be expensive, so my son doesn’t get to eat it as often as he’d like. Recently I made some gluten-free mini pizzas using polenta. They’re super easy to make and he loves them! They come out quite a bit moister and heavier then pizza crust so we eat it with a fork. Here’s how I make them.
INGREDIENTS
- roll of Polenta
- pizza sauce
- shredded mozzarella cheese
INSTRUCTIONS
Preheat the oven to 400 f.
Slice one 1/2 inch wide piece of polenta off of the roll for each mini pizza you want to make.
Lay the polenta slices onto a baking tray.
Place a teaspoon of pizza sauce onto each slice of polenta.

Sprinkle a little shredded mozzarella onto each piece.
Bale for 10-12 minutes, until cheese is melted.
Serve and enjoy.

Would you believe that I have never even tried polenta? I haven't the slightest clue what it is, but these look yummy.
