The beginning of November marks such a busy season. Despite busy schedules people work hard to find opportunities to visit with extended family and friends. These group gatherings are a great way to celebrate the season and spend time together. Once in a while you may go to someone’s house where they’ve made an entire meal, but lately I’m seeing “Friendsgiving” style dinners more and more. I’m talking about a group of friends getting together for a potluck style meal. This type of meal is popular because everyone brings something and no one person winds up doing all of the cooking for an army. More time to spend with friends and less time working in the kitchen can be a good thing! I find that during this time of year casseroles are a hit.
I love casseroles, don’t you! They can be so yummy and comforting, and they can feed a decent number of people. And often, they can be super easy to make. You just can’t beat a dish that requires little to no prep work that almost cooks itself. Which is how I’d describe my go-to dish for holiday gatherings. It’s made with products we almost always have on hand, and if we’re out they’re all easy to get and store well. In one stop at one of my favorite stores, Walmart, I stocked up on everything I need to make an awesome casserole.

The base, of my Friendsgiving casserole is Stove Top stuffing. Being the season that it is, I didn’t have to look very hard for this.

If it isn’t on an end cap in your store, check the aisle with the soups, boxed dinners and boxed potatoes.

I chose the Stove Top Chicken Stuffing on this particular day because I had decided to use chicken. You could easily use one of the other varieties, the Turkey and the Savory Herb also work really well in casseroles.

Next you need to add something to hold the dish together. Ranch dressing not only holds it together but it gives it a little zip. Go around the corner and you’ll find the aisle with condiments and salad dressings and similar products.

Grab some Kraft Ranch dressing.

And finally you need some cheese. You know where the cheese is, it’s in the refrigerated section near the edge of the store.

Sharp cheddar works really well in this casserole.
FYI. This casserole can stand on it’s own without meat. BUT, I think it’s far better with meat in it. You can frequently find pre-cooked chicken or turkey in my house. I already had some so didn’t bother to buy more. If you don’t have any, a few brands offer packages of ready-to-eat meats, in my Walmart they’re over near the deli.

INGREDIENTS
- 1x 12 oz twin pack (or 2 boxes) Stove Top Chicken Stuffing
- 24 oz (1.5 bottles) Kraft Buttermilk Ranch Dressing
- 9 oz roasted chicken breast (I used a package)
- 2 cups Kraft Shredded Sharp Cheddar Cheese
- 8 oz Philadelphia cream cheese (softened)
INSTRUCTIONS
Preheat oven to 400 degrees.

Cut the chicken into small chunks.
Place the contents of both packets of stuffing mix into a large bowl.
Add the ranch dressing and stir well.

Add the softened cream cheese and stir well.
Add the chicken and stir well.
Place contents of bowl into baking dish.

Even out the mixture.

Sprinkle the rest of the shredded cheese on the top.
Bake for 20 minutes.

Serve immediately and enjoy.
