Not only did we get 10 inches of snow over the weekend, but we also had a blast of unusually low temps at the same time. I wanted to make some soup. Everyone wanted my creamy chicken soup, but I didn’t have everything I needed to make it. I was personally in the mood for grilled cheese with tomato and bacon. Or potato soup, which has bacon. so many things lead back to bacon, don’t they? Anyway, I decided to make a soup that combined potato, tomato, bacon and cheese, and this is what I came up with. I am happy with it as is, you could easily give it a little kick with some hot sauce if you like heat in your soup. This soup is more creamy then brothy while still having some texture. It pairs perfectly with garlic bread.

EASY TOMATO HASH BROWN SOUP
INGREDIENTS
- 1x 28 oz can crushed tomatoes (I used the Redpack basil, garlic and oregano seasoned variety)
- 1x 28 oz can petite diced tomatoes
- 28 oz hot water
- 4x Swanson Flavor Boost Chicken packets (1 packet is the equivalent of 1 cup of chicken boullion)
- 1x 32 oz bag frozen hash browns
- 8 oz shredded cheddar cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp garlic salt
- 1/4 cup shredded bacon
- 1 cup heavy cream
- salt and pepper to taste
INSTRUCTIONS
Combine all ingredients except heavy cream and hash browns in a large soup pot.
Bring the pot to a boil, stirring occasionally.
Reduce heat and add the hash browns.
Bring to a boil, stirring occasionally.
Reduce heat and add the heavy cream.
Heat on low for about 15 minutes, stirring occasionally.
Remove from heat and serve.

I don't usually make tomato soup, although most of my soups have tomatoes and tomato sauce in them. This looks really good!

I would totally try this. I love tomato soup and usually make toast. I like the hash brown addition.
