Easy Seasoned Eye Round Roast Recipe From Val's Kitchen

Hubby and my oldest love beef. Eye round is one of hubby’s favorite cuts. If it’s on a good sale I try to stock up. This recipe is just one of the ways that I prepare an eye round, it’s probably the simplest. We prefer it rare if we’re home. You can adjust the cooking time if you prefer your beef more well done. Here’s how I made it.

Easy Seasoned Eye Round Roast


  • 3 lb beef eye round
  • olive oil spray (I used extra light)
  • 1 tbsp Italian seasoning
  • 1 tsp seasoning salt
  • 3/4 tsp onion powder
  • 3/4 tsp garlic powder
  • 1/2 tsp black pepper


Preheat oven to 375.

Place potatoes into baking pan.

Combine the seasonings in one cup and stir to blend together.

Use the olive oil spray to lightly coat the top and sides of the beef.

Sprinkle the seasoning mixture over the beef.

Bake on the bottom rack of the oven for 75-90 minutes, depending on how rare you prefer your beef.

Let stand for about 10 minutes before slicing and serving.

Slice and serve.

I also prefer my beef rare. I’ve never used olive oil to lightly coat the roast nor have I ever used Italian seasoning. I am definitely going to try this one.

Especially love it grilled–seasoned, from spit, cut and served hot with leftover piece cut and sliced for later sandwiches. Yum!

I love rare meat…this looks perfect for me. My husband likes his fully cooked though so I usually end up just making it all the same. Maybe Ill do it my way this time cause this looks really good 🙂

Your receipe does not include potatoes do you put roast over sliced potatoes?

Yes you could serve it with potatoes, or rice or any other starch as well.
