I love potato soups. I wanted to try my hand at making one from scratch. I kept it very simple since it was my first time out. This soup was really easy to make, the hardest part of making it is peeling all of the potatoes. It was very tasty the first day and even better the second and third.
INGREDIENTS
- 4 lbs potatoes
- 2 lbs ground Italian sausage
- 2x 12 oz cans evaporated milk
- 2 cups milk
- 2 tbsp onion powder
- 2 tbsp garlic powder
- 2 tbsp salt
- 2-4 oz shredded cheddar cheese
INSTRUCTIONS
Cut potatoes into chunks.
Place potatoes into stock pot and boil.
While potatoes are boiling, brown the sausage.
Drain the potatoes.
Put the potatoes back into the pot.

Using a potato masher, mash the potatoes. Do not mash them all the way, leave lots of chunks.

Add evaporated milk, milk, onion powder, garlic powder and salt and stir well.
Stirring occasionally, cook on medium for about 10 minutes, long enough to get everything to heat back up and blend together.
Remove from heat.
Sprinkle cheese on top of the soup, then serve and enjoy.

I thought about doing this with a different potato and leaving skin on..yukon gold maybe?

I take the skin off because I prefer the taste that way. I don't see any reason why a Yukon Gold wouldn't work, I use those or Eastern Whites the most.
