Need a simple chicken recipe? Monterey Chicken is one of my favorites at a local restaurant. I have two different ways that I made it. On a busy day, I like making the dish this way because it only calls for a couple of ingredients and it’s easy to make. Also I like making it this way in the summer because I use the Ninja’s oven setting and the whole kitchen doesn’t heat up while it’s cooking. Here’s how I make it.
Easy Monterey Chicken
- 2 1/4 lb chicken tenders
- 1.5 cups bbq sauce (I used Sweet Baby Ray’s)
- 28 oz can diced tomatoes (I used onion and garlic variety)
- 1 cup shredded cheddar jack cheese
- 1/2 cup crumbled bacon
Place chicken in the Ninja and cover with the tomatoes, then the bacon, then the bbq sauce.
Cover everything with the cheese.
Set the Ninja to oven on 350 and cook for 30 minutes.
Serve immediately with your favorite side.
