Cranberry Chicken Salad Recipe

Here’s a quick and really tasty salad I like to make. It’s versatile, it works on a bed as an actual salad or on a sandwich. The cranberry gives it a little sweet and sour pucker and the cheddar balances that out. Here’s how I made it.

Cranberry Chicken Salad

INGREDIENTS

  • 9 oz roasted chicken breast (if you don’t have any you can use 1x 9 oz package of Perdue Short Cuts like I did)
  • 1 cup sweetened dried cranberries
  • 1/2 cup mayo
  • shredded cheddar cheese
  • salt and pepper

INSTRUCTIONS

Cube or dice the chicken and place in a bowl.

Add in mayo and stir well.

Add in the cranberries and stir gently.

Sprinkle cheddar cheese as liberally as you like across the top.

Serve and enjoy on your favorite bread or on a bed of lettuce with salt and pepper to taste.

I love chicken salad. This variation looks so good. I also love the large lettuce - so you can eat it as a wrap or in a sandwich. Thanks for sharing :)

I recently had cranberries and halo oranges in a salad, it really goes well I love combining fruits and veggies. Its opened up a whole new world to me when it comes to salads!
