I enjoy Chicken Croquettes every now and again. I love the gravy over that tower of breaded yumminess. I was curious what would happen if I made my own chicken croquettes, not with breading but with stuffing. They were really easy to make and quite tasty. It’s a different flavor than a traditional croquette, but if you’re like me and love stuffing and gravy, it’s a better taste. Here’s how I made them.
Easy Chicken Stuffing Croquettes
Ingredients
- 1 box chicken stuffing (I used StoveTop)
- 9 oz chicken breast (I used Perdue Short Cuts oven roasted.)
- chicken boullion
- chicken gravy (I used a jar.)
Instructions
Preheat oven to 375.
Make stuffing according to the instructions on the package. I made mine in the microwave. Where it calls for water I used that amount of water but I mixed it with a chicken boullion cube.
Chop chicken into small pieces. Don’t cube, those pieces would be too big.
Add the chicken to stuffing and combine well.

Place croquettes onto a greased baking sheet.
Bake for 15 minutes.
Heat (or make) the gravy while the croquettes are baking.

Serve immediately with gravy.

This is definitely a meal my family could enjoy! I have made one with a turkey roll up, but this is delicious, and easy to take for leftovers!

I can see myself making this for Thanksgiving. It gives my family another dish to have instead of turkey.
