I’ve been trying to put together new dishes to eat, along with variations of things I’ve made before. This past week I anted to do something with chicken and potatoes. I had some leftover cooked sweet Italian sausage, so decided to add that in. Everyone really liked the flavor, and found the chunky meal to be hearty and filling, which was a big deal since it’s also gluten-free and that isn’t always the case. Here’s how I made it.
Cheesy Sausage Chicken And Potatoes
- 8 large potatoes
- 1 lb sweet Italian sausage (I used Premio, it’s gluten-free)
- 1 lb thin sliced chicken breast or chicken tenders
- 2x 14.5 oz diced tomatoes (the variety seasoned with basil, garlic and oregano)
- 4-6 oz shredded cheddar cheese
- 1 tbsp onion powder
- 1 tbsp garlic powder
- @ 1 tbsp Hawaiian red salt (can be more or less according to your taste)
- 1/4 cup olive oil
Cook the sausage in a frying pan.
While sausage is cooking, preheat oven to 350 f.
Spray a large baking dish with nonstick cooking spray.
Peel and cube the potatoes and place them into the baking dish.
Coat the potatoes with the olive oil, mixing well by hand.
Sprinkle the Hawaiian red salt, onion powder and garlic powder over the potatoes and mix well by hand.
Bake the potatoes for 20 minutes.
Add the chicken to the potatoes and bake for 20 minutes.
Add the cooked sausage to the potatoes.
Sprinkle the tomatoes over the top of the potatoes.
Sprinkle the shredded cheese over the top of the dish and bake for 20 minutes.
Remove from oven.
