Summer officially started a bit ago but the heat arrived here at the Jersey shore with a vengeance this past week. One of the things I enjoy the most when it’s hot is a slushie. They are so cold and refreshing, on a really hot day they’re like a little bit of heaven in a glass.

This Blueberry Apricot Slushie is super easy to make. There’s only two ingredients (three if you use the optional sugar) and ice needed to make this cold and refreshing fruity drink. blueberries are in season during the summer and this colorful cold beverage is a perfect use for them. This recipe makes approximately 4 servings, depending on the size or type of glass that you use.

Equipment Needed

  • blender
  • measuring cup

Ingredients

  • ½ pint blueberries
  • 5 apricots
  • 4 cups ice
  • ⅓ cup sugar (amount to taste, the sugar is optional and can be omitted)

Instructions

Wash the fruit.

Slice the apricots and remove the pits.

Place the apricots, blueberries and ice into the blender. If you’re using sugar add that to the blender as well.

Blend until smooth.

Pour into a glass and serve immediately.

Tips

Start off with 2 cups of ice, then add as you go until you’ve reached your desired slushie consistency.

If your blender is small, make it in batches then pour into a larger container/pitcher.

Add more or less of the sugar or fruit to suit your taste.

If it becomes too thick, add a splash of water.
