Summer officially started a bit ago but the heat arrived here at the Jersey shore with a vengeance this past week. One of the things I enjoy the most when it’s hot is a slushie. They are so cold and refreshing, on a really hot day they’re like a little bit of heaven in a glass.

This Blueberry Apricot Slushie is super easy to make. There’s only two ingredients (three if you use the optional sugar) and ice needed to make this cold and refreshing fruity drink. blueberries are in season during the summer and this colorful cold beverage is a perfect use for them. This icy slushie is perfect for hot days and poolside entertaining. Here’s instructions on how to make a Blueberry Apricot Slushie.

Tips

Start off with 2 cups of ice, then add as you go until you’ve reached your desired slushie consistency.

If your blender is small, make it in batches then pour into a larger container/pitcher.

Add more or less of the sugar or fruit to suit your taste.

If it becomes too thick, add a splash of water.
