Gluten-free Bacon Topped Cheese Stuffed Meatloaf Recipe - From Val's Kitchen

I’ve put cheese in meatloaf before. I had a taste for it again recently. The difference is, this time I really wanted to stuff it full of cheese. I decided to use string cheese instead of the shredded cheese that I usually use. It worked out really well, there was so much ooey, gooey, melty cheese. Everyone enjoyed it and it was gone in one night. Here’s how I made it.

Bacon Topped Cheese Stuffed Meatloaf


  • 3.25 lb ground beef
  • 1 cup mashed potato flakes
  • 6 mozzarella sticks
  • 8 bacon slices (I used pre-cooked slices)
  • 1/4 cup bacon bits
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • salt and pepper to taste


Preheat the oven to 375f.

Combine the ground beef, onion powder, garlic powder and potato flakes and mix well.

Place about half of the meat mixture into the baking pan.

Place the cheese sticks into the middle of the bottom layer of meat. Do not go all the way to the edges, be sure to leave room as you still have to add more meat and close the meatloaf up.

Place the remaining half of meat on top of the cheese. Pat so that the meat is distributed evenly across the top, all of the way to the sides. Also, be sure to make sure the top half of the meat meets the bottom half, and gently press closed.

Lay the strips of bacon across the uncooked meatloaf.

Cook for 1 hour.

Serve with salt and pepper to taste.

Oh my God, my husbsnd would love this! I have to make it for him. However, I’m a bit confused about potato flakes. I’ve never heard of them before. Where do younget them from? I’m in the UK if that helps. If I can’t get them what would you recommended as a substitute?
