
I love chicken salad. I also enjoy chicken club sandwiches, made with chicken, bacon and cheese. I am a big fan of tomatoes, they are one of my favorites. I like them as is, in things and on things. And I also like them stuffed. I decided to try stuffing some tomatoes with some of the ingredients used to make that chicken club I mentioned. It didn’t take too long to make them and they were a really tasty meal. Hubby loved them. I loved them. My youngest was even able to eat them because they were gluten-free. Here’s how I made them.
Bacon Chicken Salad Stuffed Tomatoes
INGREDIENTS
- 2 large hot house tomatoes
- 1 cups cooked chicken breast (I used Perdue Short Cuts Italian)
- 1/2 cup crumbled bacon
- 1/2 cup mayonnaise
- 1/2 cup onion
- 1/4 tsp ground black pepper
INSTRUCTIONS
Cut the tops off of the tomatoes and scoop out the insides, leaving all walls and the bottom intact.
Turn tomatoes upside down to drain.
In a medium sized bowl, combine the chicken, crumbled bacon, onion, black pepper and mayo and mix well.
Fill the empty tomatoes with the chicken mixture.
Serve immediately.

Wow, what a tasty combination. I have never heard of stuffing a tomato with bacon and chicken salad. Sounds so good.
