Bacon Cheese Grilled Tomatoes #recipe

For me, the best part of a BLT is the B and the T. And the cheese. I actually don’t care for lettuce at all. We finally got ourselves a small working grill so I have been facing my fear of grilling. The other night I went out to put some burgers on for my son. I had tomatoes out and was slicing one, and wondered how I’d like them grilled. I decided to make a BLT inspired snack, but no L. And I decided to add cheese, because I love cheese. Here’s how I made the Bacon Cheese Grilled Tomatoes, which are a great side or snack.

Bacon Cheese Grilled Tomatoes recipe

INGREDIENTS

  • 2 tomatoes
  • Olive oil (didn’t measure, maybe 1 tbsp)
  • Italian seasoning (approx 1 tsp)
  • Sea salt (I used a grinder, two twists covered everything)
  • Shredded cheese (approx 1 oz)
  • Crumbled bacon (approx 1-2 tsp)

INSTRUCTIONS

Heat grill. I had mine on high.

Half tomatoes and place flat side up on foil tray or baking pan.

Drizzle olive oil on tomatoes.

Sprinkle Italian seasoning and then sea salt over tomatoes.

Sprinkle the crumbled bacon on the tomatoes.

Sprinkle the shredded cheese.

Place tray or pan on grill.

Heat for 10 minutes, until cheese is melted and tomatoes are warm.

Next time I do this I’m going to just try using foil directly on the grill, to save me from having to wash the tray.

We do this but we put the tomotoe right on the rack (well, the higher ones you use for the buns). Yum!

Those look scrumptious! They remind me of a dish my dad makes He uses garlic and herbes the provence and cooks them in a pan very slowly ... they are truly divine. I'm going to have to ask him for his recipe and try them on the barbecue... meanwhile I'm going to give these a try :-)
