We'd love it if you shared it!

Have you ever had Bob Evans refrigerated mashed potatoes? I have, and they’re really good! They’re smooth and yet have the little lumps that homemade potatoes have. It would seem that I’m not the only one with this opinion, as a recent survey found Bob Evans refrigerated mashed potatoes to be the #1 selling refrigerated mashed potatoes in America. What better time to celebrate this news then just before National Potato Day? That’s right, there is a National Potato Day; it’s August 19.
To celebrate, Bob Evans is releasing a collection of mashed potato recipes called the Mashtini Recipe Collection. It’s a collection of recipes calling for Bob Evans refrigerated mashed potatoes and other items you’ve probably got in your kitchen. The Mashtini Recipe Collection consists of Smoky Spud BBQ, Classy Carbonara, Sweet Tater Twist, Fiesta, Clubhouse, and Maditerranean. They look like this.

Sound interesting? It does to me, as we cook with a lot of potatoes and I often use them as an ingredient for a dish. When the folks at Bob Evans asked me if I’d be willing to try one of the recipes, I couldn’t say no. I mean, the potatoes are just yummy. I received a fun Mashtini kit and started the fun. I had a hard time deciding which to make, so I made two – the Smoky Spud BBQ Mashtini and the Clubhouse Mashtini. Bob Evans refrigerated mashed potatoes are super easy to make, you just heat them. These recipes are just as easy to make as the potatoes themselves.
Clubhouse Mashtini
Prep time: 25 minutes
Yields: 4 Mashtinis
Ingredients

  • 1 package (24 oz.) Bob Evans Original Mashed Potatoes
  • 1/4 cup Swiss cheese, shredded
  • 1/4 cup ham, diced
  • 1/4 cup Bob Evans oven-roasted diced turkey (from Bob Evans Restaurant) or 1/4 cup of any diced, cooked turkey
  • 1/4 cup cooked bacon pieces, crumbled
  • 1/4 cup ranch dressing
  • 4 mini gherkin pickles (optional)

Directions

  1. Prepare Bob Evans Original Mashed Potatoes by following the recommended microwave instructions on the package.
  2. Place about 1/3 cup (1/8 package) of mashed potatoes in a martini glass.
  3. Sprinkle 1 Tbsp. diced ham on top of potatoes.
  4. Place another 1/3 cup (1/8 package) of mashed potatoes on top of diced ham.
  5. Sprinkle 1 Tbsp. of each on top of mashed potatoes: Swiss cheese, turkey and crumbled bacon pieces.
  6. Lightly drizzle ranch dressing over toppings.

This recipe was my youngest son’s favorite, he gobbled down two servings. I substituted shredded cheddar cheese for the Swiss cheese. Here’s what it looked like.

  • 1/2 cup Bob Evans Wildfire BBQ Sauce
  • 3 scallions, diced

Directions

  1. Prepare popcorn chicken by following the recommended baking instructions on the package.
  2. In a small bowl, toss prepared chicken with Bob Evans Wildfire BBQ Sauce, coating evenly.
  3. Prepare Bob Evans Original Mashed Potatoes by following the recommended microwave instructions on the package.
  4. Swirl 1 Tbsp. Bob Evans Wildfire BBQ sauce around the inside of each glass.
  5. Place 3/4 cup (1/4 package) of mashed potatoes in a martini glass.
  6. Place 4 pieces of Bob Evans Wildfire BBQ-coated popcorn chicken on top of mashed potatoes.

This recipe was my favorite. I modified slightly, using unbreaded chicken instead of breaded chicken.  This is what I ended up with.
