Equipment Needed
Ingredients
- 2 cups all purpose flour
- 1 1/2 cups granulated sugar
- 2 tsp baking soda
- 1x 15 oz can crushed pineapple (do not drain)
- 2 eggs
Icing
- 1 stick of unsalted butter
- 3/4 cup granulated sugar
- 1/2 cup milk
- 1 tsp vanilla
- 1 cup shredded sweetened coconut
- 1 cup chopped pecans
Optional
- whipped cream for topping

Instructions
Preheat the oven to 350 degrees.
Place the flour, sugar and baking soda into a large glass mixing bowl and stir.
Mix in the pineapple and the eggs until combined.
Bake for 30-35 minutes.
Start making the icing while the cake is baking.
Place the butter, sugar and milk in a saucepan and heat to a boil, stirring often.
Add in the vanilla, coconut and pecans then boil for about 2-3 minutes, continuing to stir often.
Once the cake has finished baking, remove it from the oven and place it on a cooling rack.
Let the cake cool until it’s warm, then pour the icing over the cake until it’s completely covered.
Allow the cake to set for 30 to 60 minutes before cutting.
Serve and enjoy!

I have this recipe from the 1980s
I received it from Miss Josephine Gonzales Andrew’s , from Louisiana this recipe is so old. Miss Josephine lived to be 100 years old. She would bake this cake on Sundays for church. We definitely look forward to Sundays with Miss Josephine.

I've never heard of a Cajun cake before, but definitely a fan of including pineapple in recipes other than an upside down cake! The texture looks amazing
