Valentine’s Day is almost upon us. I’ve always believed you don’t have to spend a lot of money on Valentine’ day. It doesn’t have to cost an arm and a leg to make someone feel special. One way to make someone feel special is to make them a favorite meal or dish. Valentine’s Day Cookie Bars are the perfect sweet treat for any of the special Valentines in your life. These soft and chewy homemade cake bars are topped with frosting, then decorated with a rich pink icing and sprinkles. The recipe is easy to make, and is a fun way to celebrate the day. Here’s how to make them.

Valentine’s Day Cookie Bars

Prep time: 15 minutes

Cooking time: 15 minutes

This recipe makes approximately 12 to 16 cookie bars, depending on the size you cut them.

Equipment Needed

Ingredients

  • 1 cup butter
  • 2 cup sugar
  • 4 eggs
  • 2 tsp vanilla
  • 5 cups flour
  • 1/2 tsp baking soda
  • 1 cup red m&ms

Frosting Ingredients

  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 2-3 tbsp heavy whipping cream
  • 1 tsp vanilla
  • 1-2 drops of light pink food coloring
  • Valentine’s day sprinkles

Instructions

Preheat the oven to 375 f.

Place the butter and sugar into a large mixing bowl and cream until combined.

Mix in the eggs and vanilla.

Place the flour and baking soda in a second mixing bowl and mix together.

Mix in the dry ingredients gradually until fully combined.

Mix in the red m&ms.

Spread the cookie dough on a cookie sheet covered with parchment paper.

Bake at 375 degrees for 10-15 min or until toothpick comes out clean. Do not overbake!

Once the cookie bars have finished baking, set aside on a cooling rack.

While the cookie bars are cooling, start making the frosting.

Place the butter into  medium sized mixing bowl and beat on medium speed until it’s smooth.

Add in the powdered sugar and mix on low speed at first, then increase to medium speed until the mixture starts to come together.

Add in the heavy cream, vanilla extract, food coloring and salt and continue mixing on medium-high speed for another minute or until everything is well combined, scraping down sides of bowl as needed.

Once the cookie bar is cooled and the frosting is made, frost the cookie bar until it is totally covered.

Top the cookie bar with the sprinkles before cutting.

Serve and enjoy!
