Green Bean Salad with Tomatoes & Feta

This Green Bean Salad with Tomatoes & Feta makes for a great side, or even works as a meal all by itself.  This versatile salad combines garden fresh herbs and veggies with the delicious salty flavor of Feta cheese. As an added bonus, it takes less than 20 minutes to put together and can be enjoyed either warm or cold.

This recipe serves 4-6 people. It calls for 10 minutes of prep time and 7 minutes of cooking time. This salad can also be chilled and served cold.

Ingredients

  • 1.5 lbs fresh green beans, tips removed and cut in half
  • 1 cup feta cheese, crumbled
  • 1 pint grape tomatoes, washed and cut in half
  • 1 tbsp fresh basil leaves, finely chopped
  • 1 tbsp fresh parsley leaves, finely chopped
  • 3 tbsp extra virgin olive oil
  • 2 tbsp sherry vinegar
  • sea salt and black pepper, to taste

Instructions

Over high heat, bring a large pot of salted water to a boil.

Add the green beans to the pot and cook until crisp and tender, which takes approximately 3-4 minutes.

Drain the green beans and then transfer them to a large bowl of ice water to prevent further cooking.

Remove the green beans from the ice bath and pat them dry before adding them to a large glass or other non-reactive bowl.

Add the tomatoes, basil, parsley, olive oil, and vinegar to the bowl and toss to combine.

Season with salt and pepper to taste.

Gently fold in the crumbled feta cheese and serve immediately.

    That sounds really delicious. I love green beans but believe it or not, I've never had them in a salad before. Looks like it's time to change that.

    This sounds like a wonderful salad with some veggies we don't eat often. I'm not sure if my daughters would like it but I would definitely convince them to have a serving on their plate at dinnertime. YUM!

    This is such a gorgeous, fresh salad perfect for Spring. I think this would be perfect as a side for a roast and make a perfect Sunday supper.
