
I was really pressed for time the other night. I needed something gluten-free that cooked super fast. I almost always have cooked or ready-to-serve chicken on hand, and always have rice. I’d picked up some fresh parmesan cheese and decided to use that. The resulting dish was terrific, with the marvelous combination of garlic and parmesan working together as usual for a win. My youngest loved it, as did the hubby. We’ll definitely be having this dish again. Here’s how I made it.
One-Pot Gluten-free Parmesan Garlic Rice With Chicken Recipe
Ingredients
- 9-12 oz chicken breast (I used 9 oz Perdue Short Cuts Roasted Chicken)
- 4 cups Minute Rice
- 4 oz parmesan cheese (shredded or a piece of a block that you shred)
- 2 cups chicken broth
- 2 cups milk
- 2 tbsp minced garlic
- 1/2 tbsp Italian seasoning
- 4 tbsp butter
Instructions
In a large skillet, brown the minced garlic in the butter.
Once the garlic is browned and has started to break down a little, add the chicken broth, milk and Italian seasoning.
Bring the contents of the skillet to a boil.
Add the Minute Rice and stir well.
Turn heat off.
Add the parmesan cheese and stir well.
Add the chicken.
Cover and let sit for about 5 minutes.
Serve immediately with salt and pepper to taste.

Hello VALMG,
This looks delicious. I always been a fond of chicken cooked along with rice. Doesn't matter what type you choose to cook, it sounds me delicious in every sense.
This recipe is very simple and easy to cook. I wonder if you could tell me, what to do with the chickens. Arey they need to be boiled or we can just fry those chicken breast?
Could we use some sausage to add up some color to this recipe.

I just made a stir-fry using left over rice, frozen veggies, and extra chicken--convenient and tasty. Economical too.
