Chicken And Broccoli Mac & Cheese #Recipe

If you read From Val’s Kitchen yesterday then you might recall I posted a review of Pirate’s Booty Mac & Cheese. I enjoyed the mac & cheese all by itself, but I thought it would be fun to build a meal around it, instead of using it as a side. I chose to start with the aged white cheddar because it’s tasty and just a bit different then the orange mac & cheeses we usually have. I had some ground chicken that I knew would go well with the mac & cheese, and grabbed some frozen broccoli from the freezer too. The whole meal was ready in 15 minutes, and is perfect for a quick meal on those days where you’re on the go. Here’s how I made it.

Chicken And Broccoli Mac & Cheese

INGREDIENTS

  • 2 boxes Pirate’s Booty Aged White Cheddar Mac & Cheese
  • 1 lb ground chicken
  • 8-10 oz frozen chopped broccoli
  • Salt and pepper to taste

INSTRUCTIONS

Prepare mac & cheese according to instructions on the box.

While that is happening, brown the ground chicken.

This is also when you need to cook the broccoli. Either do it in the microwave if you have steamable broccoli, or boil it.

Drain the mac & cheese and put back into the pot.

Prepare mac & cheese according to instructions.

Drain the broccoli and add it to the mac & cheese, then stir well.

Drain the chicken and add it to the mac & cheese, stirring well.

Serve with salt and pepper to taste.

I rarely add protein to mac and cheese, I find it rich enough on its own. Maybe some bacon or lobster but a salad on the side and I'm good!

Since hubby hates the stuff, I by nature a one meal fore all cook, make it as a side. Hopwever, snce I have successfully added tuna or chicken to elbows for macaroni salad, this twist sounds like a good hot meal possibility.
