Slow-cooker meals have recently soared in popularity, and it’s easy to see why. They are healthy, economical, and simple. However, many slow-cooker recipes rely on old methods that lead to “stewed” results. Nancy S. Hughes improves these recipes by adding fresh ingredients at precise moments to create flavors that pop. Hughes shows how to rejuvenate chili by adding raw onions, peppers, tomatoes, lime, and sour cream at the right point, resulting in flavor, crunch, color, and freshness! With small twists to beloved recipes, anyone can create hassle-free dishes that instantly become classics. And these recipes are not only fresh and fabulous, but healthy too. They meet the American Diabetes Association’s nutrition guidelines, designed to help diabetics manage their blood glucose levels. Each recipe also has nutrition information and diabetic exchanges for easy meal planning. This gorgeous book filled with tips, tricks, and techniques is a go-to favorite for any cook with diabetes.|

The beginning of this cookbook offers a lot of information about slow cooking, its advantages, and tricks to do it well. Then come the recipes. Each chapter includes an index of the recipes within it, which I find very helpful. Recipes are very easy to understand. Along with ingredients and instructions they also contain food exchanges and nutritional information as well as prep and cooking tips. Cooking time is inside the recipe. I’d find it very helpful if it were at the top of the recipe along with prep time. I often use those things to help me decide what I have time to make when I’m looking for a new recipe to try. Sadly, there are very few photos in this cookbook – 16 of them in the center of the book. I use photos to help me select what I want to make, and to judge the outcome of my dish if I make one.

Obviously you don’t have to be a diabetic to use this cookbook. There are a number of recipes in here that I’d like to try, including Tangy Sweet BBQ Pork, Herbed Parmesan Chicken Soup, Italian Chicken-Sausage Potato Soup, Cheese Topped Creamy Chicken, Pizza Pot Pasta, Homestyle Pork and Cheddar Casserole, Cherry-Pear Dump Cake, and Triple Berry Dumpling-Style Shortcake.

My grandma was a diabetic. My Mom is a diabetic. I remember how challenging it was when diagnoses were first received, as well as how hard it was to find new recipes appropriate for the diet. I love my slow cooker. It’s great for winter comfort food. And, it’s just as great for making meals in the summer so you don’t heat the house up. This cookbook would be a good choice for anyone that has diabetes, or anyone that cares for someone with diabetes.
