I have been wanting to make another potato soup for a while. I had some chicken I needed to cook so decided to try my hand at a chicken and potato soup. We liked it quite a bit. I’m thinking I’m going to make a few revisions and try for a creamy version next time.
Chicken And Potato Soup
Ingredients
- 1x 12 oz bag frozen baby mixed vegetables
- 10 small-medium potatoes
- 1.5 lbs chicken breast
- 1 envelope dry milk
- 4 cups water
- 2 cups milk
- 1x envelope onion soup mix
- seasoning salt
- garlic powder
- salt and pepper to taste
Instructions
Cut the chicken into cubes or strips.
Place a little olive oil into a frying pan and brown the chicken, which takes about 10 minutes.
Add all ingredients except for the onion soup mix and the dry milk to a large pot.
Add the chicken to the pot and bring pot to a boil.
Once the pot comes to a boil, lower the heat to medium and add in the onion soup mix and the dry milk.
Cook on medium heat for 15-20 minutes, until the potatoes are tender.
Serve.

Love those comfort soups. ....especially on a cold wintry day...such as today in Texas...oh wait....if I wait - it will be in the 80's very very soon!!

Oh I love potato soups. My husband isn't a big soup fan, but so I tend to buy my own signature soups on sale at our market. But I'd love to make this recipe a little smaller and personalize it for myself. :) Thanks!
