Huevos Suburbia (Cheesy Bacon Eggs And Sausage Tortillas) NoBake #Recipe

Eggs are awesome. They’re great by themselves, and they’re a key ingredient in many recipes. I know some of my favorite things involve eggs – casseroles, pies, cookies, cakes, brownies, all sorts of things. But, being the middle of summer, who really wants to turn on the oven? I sure don’t. Safest Choice Eggs is currently holding a No Bake Recipe Contest, in order to encourage people to come up with a no-bake meal using Safest Choice Eggs. The Safest Choice Eggs No Bake Recipe Contest runs through August 30. Entrants are able to submit their own recipes in order to have a chance at winning a luxury vacation for two to Sarasota, Florida, including an exclusive culinary lesson with world renowned chef and cookbook author Giuliano Hazan.

If you aren’t familiar with Safest Choice Eggs, they are all natural, vegetarian and kosher. The eggs are put through an all natural pasteurization process to eliminate the risk of Salmonella bacteria and viruses such as Avian Influenza. Because they have gone through this process, the eggs are safe to eat, even if they’re raw.

I was challenged to come up with my own no-bake recipe. I must say, thinking of one was a challenge all in itself. I didn’t want to do just eggs, I mean that’s too obvious. I asked some friends for suggestions. Out of the responses I got, one came up a few times – Huevos Rancheros. That’s Spanish for Rancher’s Eggs apparently. I did a little research and decided that Huevos Rancheros would not be for me, they contain a couple of things I’m not nuts about. So I decided to come up with my own variation of them, made right here in suburbia. Hence the name Huevos Suburbia. You could also call them Cheesy Bacon Eggs And Sausage Tortillas, but that sounds a bit cumbersome.

INGREDIENTS

• 4x 6 inch corn tortilla
• 8 eggs
• 6 links breakfast sausage
• 1 cup shredded bacon
• 4 oz shredded cheddar cheese
• 8 oz cream cheese
• 2 cups salsa (We found that for texture, taste and temperature using fresh salsa worked best.)

FYI If you like things a bit spicier then I do, use a medium or hot salsa, or add some hot sauce to the salsa.

This recipe is to make a quantity of four tortillas. So that means it takes 1/4 of each item (except the tortilla) to make one tortilla. Hope that makes sense.

This recipe only takes about 5 minutes to make. It looks like it takes more, but it’s just a matter of timing.

INSTRUCTIONS

Cook two eggs in a medium sized pan. I simply broke the yolk and fried them. When the eggs are about halfway done sprinkle the shredded bacon on top.

While the eggs are cooking, cook the breakfast sausage. I cooked mine in the microwave for 2 minutes, you could also do it in a pan.

When the sausage is cooked, cut it up into small pieces.

Heat the corn tortillas on low flame.

Now it’s time to soften your cream cheese. I microwaved mine for about 30 seconds. Once your cream cheese is softened, add the sausage pieces to it and give it a good stir.

Time to assemble.

Remove the tortillas from the heat and put the tortillas on a plate.

Place the eggs on top of the tortillas.

Place the cream cheese and sausage mixture on top of the eggs.

Place the salsa on top of the cream cheese and sausage mixture.

Place the shredded cheese on top of everything.

I microwaved my finished tortilla for 10 seconds to melt the cheese just a little. You could serve as is or even stick it back on the pan to heat it for a few seconds if you wanted.

Serve immediately.
