Instant Pot Taco Pasta is perfect for long, busy days. It’s a flavorful spin on a favorite comfort food. It’s warming and filling and really easy to make.
This recipe is perfect for those evenings that occur after a long day or work or errands and then a long afternoon and evening of running from one function or activity to another. It’s a flavorful spin on a long-time favorite comfort food. It serves 6-8 people, is very filling and warms the tummy. And, it’s really easy to put together. One of the great things about it is the fact that the flavor is easy to change to suit your preference. I keep this recipe on the mild side, but if you like more spice and heat just add a different salsa. Here’s how I make it.

- 1.25 lbs ground beef
- 1 lb small shells pasta
- 32 oz carton beef broth
- 14.5 oz can beef broth
- 16 oz jar chunky salsa OR 14.5 oz can diced tomatoes with seasoning if you prefer
- 14 oz bag frozen sweet yellow corn
- 1 envelope taco seasoning
- 8 oz shredded Mexican or taco cheese
- 1/4 cup sour cream, optional for topping
Press the saute button and keeping the lid off, brown the ground beef, stirring often.
Add the pasta and the beef broth to the pot and stir well.
Add in the taco seasoning, salsa (OR tomatoes), and corn and stir well. I find it easiest to use a silicone cooking spoon when working with the Instant Pot. (Well, actually when working with anything.)
Set the Instant Pot to manual 10 minutes.
After the 10 minutes have passed, do a manual pressure release. You’ll want to use a pair of silicone tipped tongs to do this, so that you don’t accidentally burn yourself.
Add the shredded cheese to the pot and stir well.
Serve immediately, with additional shredded cheese and/or sour cream as an optional topping. You can serve right from the Instant Pot. If you do this, I suggest using the Instant Pot glass lid to keep the food warm. if you’re removing the pot from the unit, be sure to use the Instant Pot silicone mini mitts to safely remove the pot without burning yourself.
