A few weeks ago we spent the weekend in New York City. We had a terrific suite at the Residence Inn in Times Square. The suite had a microwave. After having one fiasco, spending just under $100 on a meal in a national chain restaurant that would have cost like $30 at home, I decided we needed to save some money and make use of the kitchen in the suite. The meal cost under $10 to make and took less than 30 minutes to prepare, and was made using only a microwave. The ingredients are all items that I found right in a nearby convenience store. The meal was tasty and filling and so much cheaper then eating out in a restaurant. Here’s how I made it.
Chicken Broccoli Rice
- 2x 6.9 oz boxes Chicken Rice-A-Roni
- 1x 8oz package Grilled & Ready Chicken Breast Strips
- 1x 12 oz steamable broccoli
- shredded cheddar cheese (optional)
Cook the Rice-A-Roni according to microwave directions on the box, which is about 18 minutes.
Cut the chicken into bite sized pieces.
Cook the broccoli according to the instructions on the bag, which is about 5 minutes.
Add the broccoli to the bowl of rice and stir well.
Add the chicken into the bowl of rice and stir well.
Sprinkle shredded cheese over the top of the dish (or mix into the whole bowl) if you like cheese.
Serve immediately with salt and pepper to taste.
