I worked full-time outside of the home until a few months ago when I got sick. As a busy mother I’ve always appreciated products that helped me serve tasty foods while saving me some work. Betty Crocker offers many products that taste good and are easy to make. I’ve found that some of them, such as the boxed potatoes, are perfect for using as a base for a tasty meal because they’re affordable and versatile.
Here’s a recipe that I put together one night. I decided that I wanted to come up with a casserole meal that wouldn’t take a lot of time and energy. I was really in a potato mood but didn’t have the time or energy to peel the potatoes. I had a box of Betty Crocker Au Gratin Casserole Potatoes in the cabinet so I decided to try and create something with those. I’d eaten them before, but always as a side dish and not the base for a meal. I selected items from my fridge and freezer to add to them. I chose items that required little or no prep, as I wanted to come up with a one-pot meal. The recipe I came up with is valmgs Chicken Green Bean And Bacon Au Gratin Casserole Recipe .
- 1 box value size Betty Crocker Au Gratin Casserole Potatoes – requires water, milk, butter
- 1x 12 oz package steamable green beans
- 1x 9 oz package Perdue Shortcuts Italian Chicken, cut into chunks
- 1x 6oz package Canadian Bacon, cut into chunks (you can also thickly cut ham)
- 1 1/4 cup ricotta cheese
- salt and pepper to taste
Preheat oven to 450.
Steam the green beans in the microwave for about five minutes.
Make potatoes in a large oven safe casserole dish according to instructions. Do not put in oven yet. It will look like this – a bit like a soup.
Cut chicken into chunks, then add them into the casserole and stir.
Take the green beans out of the microwave. Add the green beans into the casserole and stir.
Cut bacon into chunks. Add both the bacon and the ricotta cheese into the casserole and stir.
You will now have something that looks like this, sort of like a chowder.
Bake at 450.
Remove the dish from the oven when potatoes are turning a light golden brown. The potatoes will be fork tender but I don’t recommend you taste them yet – you’ll burn your tongue. Take it from the voice of experience.
Let sit for five minutes and any excess liquid should absorb. Serve.
