valmg’s Mexican Beef And Cheese Hash Brown Casserole

We'd love it if you shared it!

I had some ground beef and wanted to do something different with it. I went through the cabinets and grabbed some ingredients and came up with valmg’s Mexican Beef And Cheese Hash Brown Casserole. It’s filling, tastes great and is easy to make! The recipe as presented isn’t gluten free because of the cans of soup, which is why I’m going to play with some different shredded cheeses next time I make it.

Mexican Beef Cheese Hash Brown Casserole Ingredients

INGREDIENTS

  • 32 ounce package hash browns
  • 1.5 pounds ground beef
  • 2 cans Cheddar Cheese soup
  • 1x 14 ounce can corn
  • 1x envelope taco seasoning mix (I use mild but you can use a medium or hot too)
  • 1.5 cups of your favorite salsa
  • Sour cream

DIRECTIONS

Preheat the oven to 375 .

Brown the ground beef. Add the taco seasoning mix to the ground beef, as per package instructions.

Place the hash browns into a lightly greased casserole pan.

Place the cooked ground beef in a large bowl (or the casserole pan if you’re so inclined).

Add in the corn and stir.

Add in the Cheddar Cheese soup and stir.

Add in the salsa and stir.

If you mixed ingredients in a bowl then add the contents of the bowl in to the hash browns and stir well. It’s heavy, which is why I just mixed right in the pan. Plus it saved doing a dish.

The dish will look wet and feel very heavy.

Mexican Beef Cheese Hash Brown Casserole Uncooked

Bake the dish for 1 – 1:15 hours, or until the ingredients are firmer and browned.

Mexican Beef Cheese Hash Brown Casserole Cooked

Let sit for 10 minutes.

Serve with a dollop of sour cream on top. The dish actually tastes good without the sour cream and can be eaten without it but I think it just gives it an extra something and prefer it with it.

Enjoy!

Are the hashbrowns still frozen? Do they need to be slightly cooked?

Looks inviting. Spicy?

It could be if you want it to. I don't like spicy things so I kept mine mild.
