Red velvet. It’s hard to believe that I remember a time, over 30 years ago, that I had never heard of red velvet. Maybe it wasn’t as popular. Maybe it wasn’t even a “thing”. I don’t know. But, it sure is popular now. Red velvet cakes and cupcakes? I see them all of the time. Red velvet cookies? Of course, they’re out there too! Speaking of which, here’s a simple recipe to make some. Homemade red velvet cookies, that is. This recipe makes 3 dozen cookies.

Equipment Needed
- stand mixer and paddle attachment
- cookie sheet (I like to line mine with parchment paper. Alternatively, you could use a silicone baking mat.)
- ice cream scoop
- wire cooling rack
- spatula
Ingredients
- 1 box fudge chocolate cake mix
- 2 eggs
- 1/2 cup oil
- 1 cup chocolate chips
- 1 tbsp red food coloring
- 1 cup powdered sugar
Instructions
Preheat the oven to 350 f.
Combine the cake mix, oil, eggs, and food coloring into the bowl for a stand mixer fitted with a paddle attachment.
Mix until a soft dough forms.
Add in the chocolate chips.
Mix until well combined.
Using a small ice cream scoop, scoop some dough out and roll it your hands to form a ball. Then, roll the ball in the powder sugar.
Place the balls onto the baking sheet, 2 inches apart.
Bake for 8-10 minutes.
When finished baking, pull the cookie sheet out of the oven and let rest for 1-2 minutes.
Transfer to a wire cooling rack and let cool before serving.

It wasn't until about maybe 7 years ago that I started seeing Red Velvet cakes etc. Maybe some baker came up with the idea then? Who knows but it sure is good! Those cookies sound like the 1 for each hand x 3 variety.
