St Patrick’s Day is approaching. Even if you aren’t Irish you have to admit it can be a fun day. You know what else can be fun? Cake pops. These tasty, colorful cake pops are perfect for St Patrick’s Day, but don’t be surprised if you like them so much you want to make them year round. Here’s how to make them.
St. Patrick’s Day Cake Pops
Equipment Needed
- parchment paper
- cupcake pan
- paper cupcake liners
- cookie sheet
- candy sticks
- measuring cup
- measuring spoons
- large mixing bowl
- double boiler
Ingredients
- 1 box dark chocolate cake mix
- 1/2 tsp Creme de Menthe flavor
- oil
- 3 eggs
- water
- 1 container chocolate frosting
- Wilton green candy melts
- Ghirardelli white chocolate wafers
Instructions
Preheat the oven to 350 degrees.
Make the cake mix according to the directions on the back.
Mix in the Creme de Menthe flavor, making sure you stir well to incorporate all of the flavors.
Once the batter is made, pour it into the cupcake liners.

Place the tray into the oven and bake for 21 minutes.
Once the cupcakes have finished baking, set the tray aside and allow them to cool.
Take out a few cooled cupcakes and remove the paper liner.
Crumble the cupcakes into a bowl until fine.
Mix in about 3 spoonfuls of frosting, using your hands to mix together. You want the consistency to be where you are able to form a ball that doesn’t crumble.

Form small sized balls.
Place the cake balls into the freezer for 2 hours.
When the cake balls are solid, remove them from the freezer and set aside.
Melt the white chocolate in a double boiler.
Dip one end of the candy stick into the melted chocolate.
Stick the white chocolate coated candy stick into one end of the frozen cake ball.
Return to the freezer for at least 30 minutes.
Dip each cake pop into the melted chocolate and place into a cup of rice or a styrofoam block.
Drizzle the cake pops with green milk chocolate.
Serve and enjoy!

Those cake pops are so cute, and i seriously forgot the St Patricks day is before Easter. Holidays like this throw me off since I have no more babies. I will enoy heading downtown for the parade. Thank you for the inspiration, trying this for sure.
