I love summer because my boys get a vacation from school and I get to spend more time with them and see them more. But I don’t love extreme summer heat and humidity, however. I try to drink more liquids during the summer in order to stay hydrated. When outside and active I also make sure my boys stay hydrated as well. BODYARMOR is a premium sports drink that provides superior hydration and is loaded with electrolytes and vitamins (2.5 times the electrolytes of other sports drinks) It’s made with 10% coconut water. BODYARMOR is high in potassium (600mg) and low in sodium (30mg). It contains no artificial flavors, colors or sweeteners and is caffeine free. I especially appreciated learning that it’s gluten-free, making it safe for my youngest son. BODYARMOR comes in six flavors – Fruit Punch, Grape, Mixed Berry, Orange Mango, Strawberry Banana, and Tropical Punch. We tried all of them. I’m not a huge fan of coconut water so was pleased to find that you really couldn’t taste any strong amount of coconut water. My favorite flavor was the Mixed Berry, my youngest really liked the Strawberry Banana and the Orange Mango.
For years, particularly when I was morbidly obese, when the summer temperatures increased so did the swelling in my ankles. I still get swollen ankles on a very hot and humid day, even though I’m down almost 200 pounds. One thing I try to do during the summer is watch my salt intake. One way to do this is to be mindful of salt used in cooking.

Grilled Garlic Shrimp Skewers

SERVES 3
Ingredients:
- 1 lb of shrimp, rinsed (increase quantity if you’re serving a crowd).
- 1/4 cup of olive oil
- 2 tblsp butter, melted
- 5 cloves of garlic, minced
- 1/8 tsp red pepper flakes
- 1/4 tsp LoSalt
- Wooden or metal skewers
1. If using wooden skewers, soak in water for at least 1 hour prior to using.
2. In a bowl, mix the olive oil, butter, garlic, and red pepper flakes.
3. Add the shrimp, and stir to coat. Marinate for 30 ish minutes.
4. Put 5-7 on the skewers. Set aside.
5. Grease the grill rack, and BBQ at about 375 degrees until the shrimp are cooked through.
6. Wait for the shrimp to cool a bit, and then eat!
Sweet, Spicy and Smoky Dry Rub
Recipe from LoSalt, by Robin, author of the Knead to Cook blog
Ingredients:
- 3/4 cup of light brown sugar
- 2 tablespoons of LoSalt
- 1 tablespoon of chipotle chili powder
- 1 tablespoon of smoked paprika
- 1 tablespoon of garlic powder
- 2 teaspoons of ground cumin
- 1/2 teaspoon of cayenne pepper
- 1/2 teaspoon thyme
- 1/2 teaspoon of ground cinnamon
1. Place everything into a mini food processor, or you can mix by hand or by adding everything to a tupperware container with a lid. Process until well-combined.
2. Store in a container with a lid for up to 6-9 months.
3. This can be used on chicken, pork or beef. Rub a generous amount on the meat and refrigerate for best results up to 24 hours or a minimum of 1 hour.
4. Place the meat on a hot grill and cook until desired temperature is achieved.

Health issues made me cook saltless long ago. However, there is a salt shaker available for those who choose.

This is the first year that not only my ankles but my entire lower legs and feet have been swelling up to the point that the doc gave me lasix- I really am not a lover of salt and never add it to foods I eat. This does sound like a good alternative to when I have to add just a pinch!
