My Mom gave me an open block of cream cheese. I didn’t want it to go bad and wanted to make something cheesecake like but not a cheesecake. I thought it would be fun to make some dessert bars. Sticking with the use what I had open theme I also used some jam and some cookies. This was very easy to make. It is tasty but be warned it is quite sweet.
EASY STRAWBERRY CHEESECAKE BARS
INGREDIENTS
- 32 oz Philadelphia cream cheese (softened)
- 1x 11 oz box Nilla Wafer Cookies
- 16 oz strawberry jam
- 1 stick butter (softened almost until liquid – I use the microwave)
- 1 tsp Vann’s vanilla extract
- 3/4 cup sugar
INSTRUCTIONS
Preheat the oven to 325 f.
Place the cookies in a large Ziploc bag.
Using the flat side of a meat tenderizer, pulverize the cookies.

Place the crushed cookies in a mixing bowl. Add the butter and stir well.
Distribute the cookie mixture across an entire baking pan, flattening and pressing it down with a spatula or large spoon.

Place the jam over the crust and spread across. I recommend not going all the way to the edges and it does run a little while baking and it’ll be less messy for you.

Place softened cream cheese, sugar and vanilla into your mixing bowl and mix well until smooth.
Pour cream cheese mixture across the jam, spreading evenly.

Bake for 40 minutes.
Remove from oven and allow to sit for at least 30 minutes. If you see a little jam around the edges it will solidify while sitting, but if you didn’t put the jam all the way to the edges you won’t see this and won’t have to worry about it.
Serve or refrigerate for 2-4 hours before serving.
