I hope you all had an enjoyable Thanksgiving. We actually still have some leftovers in the fridge. We always eat them, but I wanted to put together some simple recipes to make use of several of the leftovers, so they didn’t go to waste. I put together this easy casserole that used two leftovers, ham and green beans, plus some unused ricotta cheese I had from the lasagna I’d also made. It’s filling and tasty, and makes some room in the fridge. Here’s the recipe.
CHEESY HAM AND GREEN BEAN CASSEROLE
INGREDIENTS
- 1 lb pasta
- 2 cups ham, chunked or cubed
- 2 cups green beans
- 16 oz ricotta cheese
- 4-6 oz shredded cheddar
- 1 tbsp onion powder
- 1 tbsp garlic powder
- salt and pepper to taste
INSTRUCTIONS
Boil the pasta according to the instructions on the package.
While the pasta is boiling, preheat the oven to 350 f.
Spray a casserole dish with nonstick cooking spray.
Once the pasta is finished, drain it and put it back into the pot.
Add the ricotta cheese and stir extremely well. Add the onion and garlic powder and stir that in too.
Add the ham and stir well.
Add the green beans and stir well.
Add half of the shredded cheddar and stir well.
Pour contents of the pot into the casserole dish.
Sprinkle the remaining shredded cheddar over top of the dish.

Bake for 15-20 minutes until the cheese is melted.

Serve and enjoy.
