The second annual Fonseca BIN 27 Port & Cookie Rumble is in full swing! The contest, judged by famed chocolatier Jacques Torres and award-winning cookbook author Dorie Greenspan, seeks the best original cookie recipe to pair with Fonseca BIN 27 Port (SRP $20.99). The contest will accept entries through November 15th, 2013.
It’s as simple as uploading a recipe, along with a photo, to the BIN 27 Facebook page: Facebook.com/Fonsecabin27. The judges will select the Grand Prize winner at a December 12th event in conjunction with Tasting Table, to be held in New York City, and will announce the People’s Choice winner (determined by Facebook votes).
The Grand Prize winner will receive two tickets to the Food & Wine Classic at Aspen (June 20th-22nd, 2014), as well as a KitchenAid® Freestanding Induction Range (SRP $2,049.00) and a KitchenAid® Pro Line® Series 7-Qt Bowl Lift Stand Mixer (SRP $649.99). The People’s Choice Prize winner will receive the KitchenAid® Pro Line® Stand Mixer. How cool is that?
Jacques and Dorie kicked off the contest by creating their own cookie recipes they feel pair best with BIN 27. Dorie’s BIN 27 Broundie are rich, dark-chocolate, round brownies steeped in Fonseca BIN 27. Jacques is also offering up his addictive Chocolate Chip Macadamia recipe.

BIN 27 BROUNDIES

INGREDIENTS
For the filling:
- 2 tablespoons BIN 27 Port
- 2 tablespoons water
- 1 cup dried cherries, coarsely chopped
For the Broundie base:
- 5 tablespoons unsalted butter, cut into pieces
- 10 ounces semi- or bittersweet chocolate (divided), finely chopped
- ¾ cup sugar
- 2 large eggs, cold
- ½ teaspoon fine sea salt
- ¼ teaspoon freshly ground black pepper
- 1/3 cup all-purpose flour
DIRECTIONS
Yields about 24 Broundies
1. Position the racks to divide the oven into thirds and preheat the oven to 325 degrees F. Butter 2 muffin tins, dust the interiors with flour and tap out the excess, or use a baking spray.
2. Bring the BIN 27 Port and water to a boil, reduce the heat to low, add the cherries and stir until the liquid evaporates. Turn the fruit into a bowl; cool.
3. Put the butter in a heatproof bowl over a saucepan of simmering water; top with 6 ounces of the chopped chocolate. Heat, stirring, until melted – you’ll have a thick, shiny mixture.
4. Remove the bowl from the saucepan and beat in the sugar (the mixture will turn grainy – don’t worry). One by one, beat in the cold eggs followed by the salt and pepper. Give the mix a few strong stirs, then gently stir in the flour. Add the cherries (and any liquid in the bowl) and the remaining chopped chocolate. Divide the batter evenly among the muffin tins.
5. Bake the Broundies for about 20 minutes, or until the tops are uniformly dull; a toothpick inserted into the centers will come out clean. Cool the Broundies to room temperature in the tins and then unmold them.
Storage Instructions:
Well wrapped, the Broundies will keep for 4 days at room temperature and for 2 months in the freezer.

CHOCOLATE CHIP MACADAMIA COOKIES

INGREDIENTS
- 1 1/8 stick butter
- ½ tsp. baking powder
- ¾ cup brown sugar
- 1 tsp salt
- ½ cup sugar 1 egg
- 1 cup cake flour
- 1 tsp. vanilla
- 1 cup bread flour
- 2 cups 60% chocolate discs
- ½ tsp. baking soda
- 1 ¼ cup macadamia nuts
DIRECTIONS
Yields about 28 cookies
1. Preheat the oven to 350°F
2. Have ready 2 cookie sheets lined with parchment paper
3. In a bowl, stir together the flours, salt, baking powder and baking soda, set aside
4. In a bow of stand mixer fitted with the paddle, cream the butter and sugars on medium speed until light & fluffy
5. Add the eggs and vanilla and beat until incorporated
6. Reduce the speed to low and add the dry ingredients, beating until incorporated
7. Remove the bowl from the mixer and, using a rubber spatula, fold in the chocolate and the nuts
8. Using Tablespoons or a cookie scoop, drop heaping, rounded spoonfuls of dough onto the parchment lined sheet pans, leaving adequate space between the cookies
9. Bake for about 10 min. in a 350°F oven, until lightly golden brown
10. Remove from the oven, transfer the cookies to wire racks and let cool
