The great thing about paninis, besides the taste, is that they don’t really require a ton of prep. Just the know how of what to put between the slices of bread and how to cook it. This cookbook can help you with that. Recipes are all easy to understand. Recipes include serving size, and many include tips and variations. This cookbook only contains 16 color photographs. While they are certainly mouth watering, I wish there were more. (I should note that these photos are really appetizing, and if there were more I might want to eat the book like a panini.) There are some great panini recipes in here. I’m really looking forward to trying some including Apple Cheddar Bacon Bagels, Grilled Chicken Mozzarella and Pepperoni Panini, Cranberry Turkey Panini, Cheddar Ham and Apple Panini, Cheesy Prosciutto Panini, Canadian Bacon Tomato and Parmesan Panini, Clubhouse Chicken Panini, and Simple Strawberry Shortcakes. This cookbook would be perfect for anyone that enjoys making or eating paninis.
Greek Veggie Panini Recipe

The freshness of cucumber, tomato and red onion combines with the salty flavor of kalamata olives in this traditional Greek recipe.
INGREDIENTS
- 2 7-inch (18 cm) pitas
- 1 tbsp olive oil (15 mL)
- 1⁄4 cup hummus (50 mL)
- 4 to 6 thin slices red onion
- 1⁄2 cup diced seeded cucumber (125 mL)
- 1⁄4 cup sliced roasted red bell peppers (50 mL)
- 1⁄4 cup drained pitted kalamata olives, halved (50 mL)
- 1⁄4 cup diced seeded tomato (50 mL)
- 1⁄4 cup crumbled feta cheese (50 mL)
- Pinch freshly ground black pepper
- Pinch dried oregano
• Preheat panini grill to high
1. Brush one side of each pita with oil. Place on a work surface, oiled side down, and spread hummus over half of each pita, dividing evenly and leaving
a 1⁄2-inch (1 cm) border around the edges. Evenly layer onion to taste, cucumber, roasted peppers, olives, tomato and feta on top of hummus. Sprinkle with pepper and oregano. Fold pitas over filling, pressing gently to pack.
2. Place sandwiches in grill, close the top plate and cook until golden brown, 3 to 4 minutes. Serve immediately.
Serves 2
Tip
Kalamata olives are packed in vinegar and cured, producing a rich, sour flavor. They’re great served as an appetizer or as a complement to salads and other dishes.
