The beginning of this cookbook contains a lot of information about gluten, eating gluten-free, and commonly used pantry items, as well as equipment and techniques. Part of what gluten does is hold things together. The back of the book has some thickener substitutions, which is very helpful. Each of the chapters has an index page listing all of the recipes with that chapter. The recipes are written out clearly. Many of them contain different tips on doubling, halving, variations and prep suggestions. The ingredients used are commonly used in many gluten-free recipes. If you don’t have them you will be able to find some in your grocery store, some you may have to get from a health food store. I would have preferred to see cooking time noted somewhere outside the recipe, preferably with the prep time which isn’t included. The cookbook does have a few photos in it but not many. I’d love to see more photos in future editions, since they always help me decide what it is I want to make. Some of the recipes I’m interested in trying include Apple Pancakes, Baked Mozzarella Sticks, Chicken Pot Pie, Thin Pizza Crust, Poultry Stuffing Bread, Applesauce Raisin Loaf, Cinnamon Raisin Bread, Hot Apple Crepes, Chocolate Fudge Cake, Sue’s Shortbread, and Cinnamon Crisps. This cookbook would be great for anyone that cooks gluten-free.

Gluten-Free Batter Fried Fish Recipe

Makes 4 servings

The crisp, light batter satisfies the craving for fish and chips. Treat yourself.

• Preheat oil in deep fryer or wok to 350°F (180°C)

INGREDIENTS

  • 2 egg whites 2
  • 1⁄3 cup cornstarch 75 mL
  • 1⁄2 tsp paprika 2 mL
  • 1 lb fish fillets, such as sole, haddock or tilapia 500 g
  • 1⁄4 cup sweet rice flour 50 mL
  • Vegetable oil for frying

INSTRUCTIONS

1. In a small bowl, using an electric mixer, beat egg whites until stiff but not dry. Sift cornstarch and paprika over beaten egg whites. With a rubber spatula, fold in. Set aside.
2. Rinse fillets under cold running water and pat dry. Dredge in sweet rice flour. Dip into prepared batter to generously coat, leaving as much batter on the fish as possible.
3. Deep-fry fish for 2 to 4 minutes on each side or until coating is crisp and the fish is fork-tender. Drain on paper towels.

Tip
Don’t omit the paprika — it helps the batter to lightly brown.
